Oyster Mushroom BBQ Tacos

It's Sunday, and we want to try a new recipe. I found this online, and we had a wonderful experience adapting and enjoying every morsel.
Here are some notes that I took before making this dish:
Always shop early in the morning, run around, and get your ingredients. Sprouts in Palm Springs did not have any King Oyster Mushrooms. No worries, we've got this. We often visit AJ Filipino Market in Demuth Park. It's a gem of a store with warm owners who are always willing to help out. I picked some up from here; they had a plentiful supply of King Oyster Mushrooms. https://ajmarketps.com/homepage-1 I got them - lovely, with plenty of King Oyster Mushrooms to purchase.
Make your coleslaw ahead of time. There's nothing like crisp Napa cabbage, cold and served with a cold dressing, to make your tacos snap with flavor and contrast against the warm tacos.
BBQ Sauce. For us, it is about the nuance of flavors. There is a broad selection out there, and everyone has their favorites. Use what you like, of course, as your mushrooms will be slow-simmering on the stovetop, absorbing the flavors of the BBQ Sauce. One that we enjoyed and used for this dish was Lillies No. 55 Honey Gold Tender Sauce. It is one of the best out there. https://lilliesq.com/
The right tortilla is essential. I didn't have time to make my own, even though I had a press in the cabinet. I also wanted to get out in the yard and attend to some tasks that needed tending, too. Cardenas in Cathedral City makes its own Flour Tortillas on the premises. I picked up their Flour Tortilla de Harina. Perfect size for the meal. $3.49.
