At Bread and Flours, we believe in the power of whole grains and our American Farms and farmers.
We choose American for the following reasons:
1. Being closer to home means lower environmental costs by using less carbon-based fuel to transport grain to the United States
2. All American grain is NON-GMO. The US farmers do not grow or sell any GMO grains. It is not allowed in the USA.
3. Farm Direct - payment is directly made to the farmer instead of another operator in the supply chain.
4. Transparency - Bread and Flours believes knowing the ingredients in your food is pivotal to health and wellness.
Today, we offer our Sprouted Einkorn grown by Grand Teton Ancient Grain Farms.
We use Fresh-milled Einkorn flour. When we mixs the dough, we add wheatberries ( or seeds of wheat) that are germinated and added to our dough.
EINKORN is an ancient grain. This grain has a nutty flavor and chewy texture. This grain is not modified in any way. The gluten levels are lower in ancient grains. The flavors in ancient grains are nuanced, subtle, and beautifully complex. The beauty is in the simplicity of flavors that are direct and enjoyable. Our long cold fermentation process of all our sourdough develops many flavors.

Sprouted Wheatberries added to the dough
33% White Flour - that is not entirely sifted, some bran and germ remain in the flour
Sourdough Culture - "Lupita". Bread and Flours does not add any instant yeast to our sourdough
