Pain De Campagne / "Country" Sourdough Loaf
Originated in rural France during the Middle Ages as a hearty, sourdough-leavened staple baked in communal ovens. Designed to last for days or weeks, these larger loaves were made from a blend of wheat and rye flour, sustaining families until the next baking day. Bread and Flours models this with 10% American farmed Rye, stone-milled.

Farm Direct - grown by Oatman Farms (ROC®) Skagit 1109
A non-GMO landrace wheat that is regenerative and organic-certified (ROC®), Skagit 1109 was developed by The Bread Lab in Skagit Valley, Washington, for whole-grain use and as a pillar of the local grain economy. It was developed for flavor and high yields for organic farmers. The wheat has a cream color with brown speckles. A distinctive, rich wheat taste with subtle caramel, cacao, coffee, and nutty notes. Skagit 1109 consists of hundreds of different varieties, allowing the wheat to adapt to its environment. 67% Whole Skagit 1109 with sprouted wheatberries added to the dough.
