Originated in rural France during the Middle Ages as a hearty, sourdough-leavened staple baked in communal ovens. Bread and Flours models this with 10% American farmed Rye, stone-milled.

A non-GMO landrace wheat that is regenerative and organic-certified (ROC®), Skagit 1109 was developed by The Bread Lab in Skagit Valley, Washington, for whole-grain use and as a pillar of the local grain economy.
