    This Organic Spelt is part of the Non-GMO project, and is a heirloom grain.  Spelt has a higher fiber content, those with a mild gluten intolerance may be able to process spelt better than the average wheat.  Spelt is It is particularly rich in iron, magnesium, phosphorous, zinc, and niacin (vitamin B-3). Unbleached, unbromated, unenriched. 100% Pure, nothing taken out or put in. We use the whole grain, nothing sifted. All Grain, and all parts of the grain.


    Bread and Flours - takes the Organic Spelt and house mills the grain fresh.  This organic spelt has a milder flavor, a slight nutty flavor.  We decided to use this for slicing option, to provide another "white" loaf offering that is organic.
